For Izarra Vert, more than 17 plants are used, including nutmeg, coriander, fennel, angelica seeds and roots, celery, balsamite, otherwise known as mint-cock, elderflower, coriander seeds, black caraway, thyme serpolet, cardamom, green anise and genepi.

Born in 1906 in Hendaye, from the genius of botanist and pharmacist Joseph Grattau, the company took off when it moved to Bayonne on the eve of the First World War. From the outset, IZARRA established a Basque identity (IZARRA means "star" in Basque), becoming a symbol of the Basque country and the flagship of French liqueurs.

Wherever the Basques traveled, IZARRA accompanied them, so much so that in its heyday, IZARRA set up production sites in Latin America and Spain. IZARRA has welcomed every illustrious visitor to the Basque country in the last century, from Hemingway to Edward VII, from Nikita Khrushchev to Cocteau.
